7 Healthy Recipes for Meatless Monday

1.  Quinoa Tacos 

It might be Meatless Monday but that doesn’t mean you can’t celebrate Taco Tuesday a day early! Loaded quinoa tacos are a flavorful vegetarian taco that helps fill the void and your tortilla when you’re craving a tasty taco. Add bell pepper and pickled onion coleslaw, spicy crema, and feta cheese. Mix some taco seasoning in with your quinoa to give it that spicy kick you can’t go without. It’s a meal you can quickly prepare when your stomach starts rumbling to keep you fully satisfied through the night.

2. Veggie Burger

A veggie burger seems to be the most obvious route for Meatless Monday, but it’s also the riskiest. Burger fanatics take their meat very serious, and the idea of a veggie patty can be worse than going hungry. But not with this black bean and quinoa burger recipe! The beans act as your protein and the quinoa helps give the patty the added texture that you would expect when you cook a burger on the grill. It chars nicely and brings out big bites of flavor. 

It’s a great meal-prep dish to make for later in the week as it will hold up in the fridge for several days. Take out a patty when you’re feeling hungry, top with some avocado and hummus, and enjoy!

3. Sweet Potato Chili

It’s officially the fall season and that means sweet potatoes belong in every dish. This sweet potato chili will warm you up on a chilly fall night and taste so good you won’t miss the meat for a second. The potatoes provide the heartiness you look for in a rich and filling chili, it provides a bit of sweetness, and brings out the other flavors in your bowl. Sprinkle with shredded cheddar cheese, green onion, and a dollop of sour cream and you’ll be ready for dinner. 

Throw in some cornbread on the side and you’ll be going into hibernation early this year.

4. Burrito Bowl

A vegetarian burrito bowl is a great way to combine some of your favorite ingredients without eating a super heavy meal. A low-carb burrito bowl with cauliflower as a rice substitute is a great way to disguise your vegetables underneath other great flavors. Your bowl can include very simple toppings that are customizable for any dietary restrictions or health plans. Add sliced avocado, tomatoes, peppers, and your favorite meat substitute to mimic the flavor of authentic Mexican-cuisine. 

5. Pizza Night

If the burrito bowl didn’t cut it and you’re torn between Italian or Mexican food--this Meatless Monday recipe is the best of both worlds. This tasty Mexican pizza features refried beans on the dough to act as the pizza sauce, along with spicy jalapenos and sweet corn. Top with sour cream and cilantro and you’ll have yourself a spicy and savory slice of pizza. 

If a traditional route is more your speed, try a simple calzone with cheese, spinach, and mushrooms. Make the dough ahead of time for a fresh and easy Meatless Monday dinner. Marinara sauce for dipping is still encouraged.

 

6. Gumbo with Okra

If you’re craving a taste of the Bayou, this veggie gumbo with red beans and okra is exactly what the doctor ordered. This hearty dish is packed with Louisiana flavor! Let this slow cook all day and you’ll come home to a captivating aroma. You might not be cooking on Bourbon Street, but his gumbo recipe is one way to bring the heart of New Orleans to your kitchen.

7. Coconut Curry Soup  

If it’s cold outside on your Meatless Monday, how about a nice bowl of soup to warm you right up? A little sweet and a little spicy, this coconut curry soup is a smooth and creamy dish that hits the spot on any cool evening. The great thing about this recipe is that it can be made from simple pantry ingredients that you’ll typically have on hand. It comes together in 30 minutes or less and is a delicious plant-based soup for Meatless Monday or any other day that ends in Y.
